In our family Thanksgiving dessert is as traditional as the turkey. Every year I HAVE to make a pecan pie for my son. I have made this pie at least 4 times this year alone. We always have it for Thanksgiving but he can talk me into it at least once in the middle of the year. He did exactly that about 2 weeks ago.
Ingredients for the Thanksgiving Dessert
3 large eggs (mine were fresh straight from the chicken. hehe)
3/4 cup of sugar
1 cup of light corn syrup
2 tablespoon of butter, soften
1 heaping tablespoon of flour
1 teaspoon vanilla extract
1 cup of coarsely chopped pecans – I don’t chop mine I leave them whole and put in another handful.
1 pie crust – I have to admit that I do use Pillsbury pie crust sometimes. I also make my own. It all depends on who and when I am making it for.
Preheat the oven to 350. Prep the pie crust by putting it in a 9 inch pie dish. I use a glass one I find my pies come out nicer. I don’t understand why but they do so I used them.
Wisk together the eggs and sugar. Stir in the syrup and soften butter.
Add the flour and vanilla and combined well. Now fold in the pecans
Pour the mixture into the pie shell
Bake at 350 for 55 to 60 minutes until a knife inserted into the center comes out clean. You may need to shield the crust about half way through. You can do this with a pie shield or foil.
